It is characterized by an intense pink meat, from a good consistency and a tasty taste.
After being caught, it is worked by the cool in our factory, where the whole processing cycle is performed, from the selection of the pieces to the cleaning, from the "boiling" cooking, up to the packaging, in full respect of the ancient craft tradition.
